
Pakoras are always a joy, and makeing them with Caulilini is perfection, itself. They are a graceful cauliflower variety with slender stems and delicate florets with looks and texture that echo broccolini, and it behaves much the same in the pan, turning crisp and tender in all the right places. If Caulilini proves elusive, ordinary cauliflower, broccoli or broccolini all step in admirably, each bringing their own charm to Indian inspired dish.
