Large Tri-Colour Salad

This salad is the perfect combination of flavours and simplicity, it is made up of only 3 ingredients. You will need ripe and full flavoured plum tomatoes or vine ripened ones as a tasteless one will do nothing for this salad as it relies on quality ingredients. It is also best to use buffalo mozarello which is now available in most supermarkets in the United Kingdon and many other countries, this mozzarella is soft and melts in the mouth (if you can not find this the regular variety of soft mozzarella will do).

Ingredients

Tri-Colour Salad:

  • 18 large ripe plum or vine tomatoes, each sliced into 4-6 slices
  • 600g buffalo mozzarella, sliced into the same amount of slices as the tomato (you may need to slices these in half if you hace a very large mozzarella)
  • large bunch basil (allowing for 1 basil leave per slice of tomato
  • maldon salt and freshly ground black pepper
  • 3 tbsp extra virgin olive oil

Method

  1. Salad: Place on one large salad plate or on 6 serving plates. One slice of tomato followed by a basil leaf and then a slice of mozzarla. Repeat this until you have used all the ingredients, overlapping each one slightly so that the salad fans out around the plate.
  2. To Serve: Season the salad with a little salt and pepper and drizzle over a little olive oil. Serve.
