Ingredients

Prawns in Blankets

  • 20 prawns, Peeled & tail end shell on
  • 20 wontons
  • 100g fresh or cooked egg noodles (optional)

To Serve

  • 100ml Thai sweet chili sauce
  • 100g crème fraiche

Method

Prawns in Blankets: Place the prawn down lengthwise with the tail outside of the wonton and folding over the top if necessary. Then roll them up and seal the ends well. Tie single egg noodles around each prawn wonton in the center into a bow (optional). Heat oil in a deep fryer, wok or deep saucepan to 180° C. Fry the prawns in batches for about 2 minutes, so they are crisp and golden. Lift out and drain. To Serve: Place prawns on a serving plate with a spoonful of crème fraiche and sweet chili sauce. Prawns in Blankets make a great canapé or buffet dish, as they are easy to prepare in advance and impressive.
