Madeleines make scrumptious little cakes they are good with tea during the day but I think they are best served with coffee after dinner.

100g self raising flour
50g polenta
100g caster sugar
finely grated rind of 1 orange and 1 lime
1/2 tsp. baking soda
1 egg, beaten
5 tbsp. double cream
2 tbsp butter, melted
Method
Batter: Place all the dry ingredients in a bowl (the first 5 ingredients) and the mix the wet ingredients in a separate container (the last 3 ingredients). With a whisk, mix the wet ingredient's into the dry ingredients until combined.
To Cook: Preheat an oven to 180°C. Butter madeleine trays and spoon the mixture in them so that they come half the way up. Place them in the oven and cook them for around 10 minutes, until they have risen. Remove them from the oven and allow the to cool for a few minutes then turn them out on wire racks. Serve or store them in well sealed tins (they are best served on the day they are cooked).
