Garlic Aioli

Aioli is simply a flavoured mayonaise and is very easy to make. Serve it as an accompaniment to seafood dishes or as a dip.

Ingredients

Garlic Aioli

  • 2 garlic cloves, crushed
  • 3 egg yolks
  • 1 tbsp parsley, finely chopped
  • pinch maldon salt
  • 300ml olive oil

Method

  1. Garlic Aioli: Place the garlic, eggs, saffron and salt in a food processor and process it until just blended. While the motor is still running slowly, add the olive oil until you have a mayonnaise consistency. Serve at once.
