Salmon with Sage and Prosciutto

Salmon, Sage and Prosciutto is simple to prepare and delicious. A fabulous weekday dinner that can easily be transformed to an easy entertaining dish with the accompaniment of a saffron sauce and gnocchi.

Ingredients

  • 4 salmon fillets, skinless and boneless
  • 1-2 garlic cloves, crushed (optional)
  • 8 small sage leaves
  • 4 slices of prosciutto
  • Olive oil

To serve

  • Mashed potato
  • Sautéed Spinach (with a little crushed garlic)

Method

  1. Lightly coat the salmon with a little crushed garlic if using. Place 2 small sage leaves on the centre of the flesh side of the salmon and wrap each one in a slice of prosciutto.
  2. Place the salmon in a lightly tray lightly coated in olive oil.
  3. Drizzle over a little extra oil and place under a moderate high grill. Cook for approximately 5 minutes so the the flesh is a soft pale pink in colour. Serve
