  • 5 garlic cloves, crushed
  • 1 egg yolk and 1 whole egg
  • generous pinch of salt
  • 250-300ml olive oil


  1. Alioli: Place the eggs, garlic and salt in a food processor and process them for a few seconds until well combined. Slowly pour in the olive oil with the motor running until the alioli has thickened to a mayonnaise consistency. Serve the alioli as soon as it is prepared.
