Greek Salad
Greek Salad makes an excellent accompaniment to grilled meat and fish. The salad should be prepared just before serving.

- 1/2 red onion, peeled, halved and finely sliced
- 1 large cucumber, seeded, peeled, quartered and sliced
- 5 medium, ripe, firm tomatoes, roughly diced
- 200g goat feta, cubed
- 100g kalamata olives
- 1 tsp dried oregano
- pinch maldon salt
- 50ml red wine vinegar
- 100ml extra virgin olive oil
Method
- Lightly toss onion, cucumber, tomatoes, feta and olives together in a salad bowl. Sprinkle over the oregano and salt
- Whisk together the vinegar and oil so well combined. Dress the salad, toss the salad and serve immediately.
