Green Beans with Garlic and Tomatoes

Ingredients
300g stringless green beans, washed and trimmed
- 2 tbsp olive oil
- 1 garlic clove, finely chopped
- 1 large tomato, finely diced
- maldon salt and freshly ground pepper
Method
- Beans: Bring a saucepan of water to the boil and place the beans in it and leave them to simmer for a couple of minutes until just cooked. Drain the beans.
- Heat the olive oil in a saucepan over a moderate heat add the garlic and allow it to cook for 30 seconds. Stir in the beans and tomato concasse, season with a little salt and pepper. Serve.
