Being the best of Edinburgh's many great restaurants, it is hard to find the right superlatives to praise The Reform. Located in the middle of the tourist area on the Royal Mile, it has avoided the temptation of being just another tourist eatery. In fact we rate it so highly that it is the restaurant we recommend most to our friends.

Since The Reform is a regular haunt of ours, we have several favourite dishes, but for starters you can't pass the Grilled Scallops with a Salmon Vegetable Roll and Foie Gras Butter Sauce or the Oysters grilled with Tequila, Chilli and Goats Cheese. Vegetarian will find an excellent selection of tasty dishes, like the Ravioli of Aubergine, Red Pesto and Rocket Salad. One thing that I like about the menu is that most dishes are available in both starter and main sizes.

For mains, I just love their Scottish Beef Fillet with 'Scoundrel Sauce'. They get their beef from the Highlands, and it is always of the highest quality. Sarah, who loves seafood, thinks that the Steamed Sole with Pak Choi and Shitake Noodles served with a Mushroom and Leek Broth is an excellent dish, with just the right level of infusion to make it interesting.

The Reform is one restaurant that you need to visit. They take the very best of Scotland's fine ingredients and create dishes that are spectacular. The subtle use of infusion takes their dishes from the very good to brilliant.
