Salsa
Salsa makes a great accompaniment to many dishes, it is especially good with barbecue food. Of course it can be served on its own as a simple dip for corn chips. The addition of fruit such as mango and paw paw make an extremely refreshing salsa.

Ingredients
Salsa
- 6 medium tomatoes, diced
- 1 large red onion, finely chopped
- 3 garlic cloves, finely chopped
- 1/2 a large cucumber, diced
- 100g corn kernels, cooked (optional)
- 1/2 bunch coriander, chopped
- 1/2 bunch mint, chopped
- 4 tbsp. olive oil
- juice of 1 lime
- 2 tsp. salt
- 2 tbsp. caster sugar
Method
- Salsa: Place all the prepared ingredients in a bowl and mix them well so that all the ingredients intermingle. Leave for 1 to 2 hours at room temperature to allow the flavours to develop.
