Salsa

Salsa makes a great accompaniment to many dishes, it is especially good with barbecue food. Of course it can be served on its own as a simple dip for corn chips. The addition of fruit such as mango and paw paw make an extremely refreshing salsa.

Ingredients

Salsa

  • 6 medium tomatoes, diced
  • 1 large red onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1/2 a large cucumber, diced
  • 100g corn kernels, cooked (optional)
  • 1/2 bunch coriander, chopped
  • 1/2 bunch mint, chopped
  • 4 tbsp. olive oil
  • juice of 1 lime
  • 2 tsp. salt
  • 2 tbsp. caster sugar

Method

  1. Salsa: Place all the prepared ingredients in a bowl and mix them well so that all the ingredients intermingle. Leave for 1 to 2 hours at room temperature to allow the flavours to develop.
