Elizabeth's Chocolate Chip Muffins
My daughter loves muffins, but instead of letting her buy mass produced muffins, I prefer her to make her own. Not only do the muffins taste nicer that the ones from the supermarket, but we also know what has gone into them.

- 250g caster sugar
- 250g butter (soft)
- 2 eggs
- 500g self raising flour
- 75g cocoa powder
- 350ml milk
- 50g of Natural Yogurt
- 150g chocolate chips
You will Need
- 24 muffin cases
- 2 baking trays
- 1 wooden spoon
- 1 large mixing bowl
- 1 small mixing bowl
- 1 fork
Method
- Preheat an oven to 200°C
- Beat the butter and sugar together with a wooden spoon in a large bowl until creamy.
- Whisk the 2 eggs in a small bowl with the fork and gradually mix them into to the butter with the wooden spoon.
- Sieve the flour and cocoa together.
- Stir 1/3 of the flour and cocoa powder and then a third of the milk, repeat this process until all the flour and milk are added..
- Mix with the wooden spoon until smooth. Add the chocolate chips and mix until well combined.
- Place the muffin cases on the baking trays and fill the cases with the cake mix so that it comes 2/3s of the way up.
- Place them in the oven and cook for 20 minutes.
- Remove them from the oven and allow them to cool. Then Gobble!!
